Ukasha Arqam is a professional food technologist specialized in dairy technology having background of both industry and academia. He has completed his M. Sc. (Hons.) in Dairy Technology from University of Agriculture, Faisalabad and B. Sc. (Hons.) in Food Science and Technology from Government College University, Faisalabad. He served for more than two years as a Food Inspector in Riaz Group of Industries owns by Genius Textile Network, Faisalabad. He earned a competitive Summer Internship Program of Coca Cola Beverages Pakistan Limited in his batch 2018 and worked as a Quality Assurance Officer at Gujranwala Plant.
Ukasha Arqam’s primary research work integrates the development of plant based blend of hydrocolloids and characterization of physicochemical and sensory characteristics of ice cream. His research outcomes have successfully replaced gelatin and creamadon with blend of polysaccharides such as Carboxymethyl Cellulose (CMC), Guar Gum and Carrageenan. Other topics of interest include Fundamentals of Milk Processing, Food Protein-Polysaccharides Complexes as New Ingredients, Formation of Various Types of Milk Protein Based Gels (e.g. Yogurt and Cheese) and Validation of Rapid and Non-Destructive Sensing Technologies for Quality and Safety of Dairy Products. He also engaged himself with number of trainings and conferences nationally and internationally.
